I've got a 97 hot rod Deville 4x10 Stock speakers, 30W 8ohm "Model v 1030"
I love the way it feels, responds, sounds.
However
I run a BOSS 7 band EQ in the loop. I cut about a decibel at 1.5k, and cut about two at 3.2k. I like to soften the chime a little bit. I don't get rid of it, just soften it.
So my thinking is I should replace some or all of the speakers to soften this chime, so that I don't have to use this pedal and set up my fx loop every time I play.
Anyone have any ideas on specific speakers? Should I just stick to the EQ pedal?

The pedal is the cheapest solution, for sure! That said, I really like speakers from Warehouse Guitar Speakers in Kentucky. I'm especially partial to the Veteran 30, which might work for you, too. I replaced my Celestion Vintage 30s, which are generally considered to be pretty chimney, and I like the top end and breakup better. Plus the guys at WGS are very helpful if you contact them and describe what you want. They have a downloadable tone chart for their speakers that helps as well. Check em out. edit forgot you are running 4x10. They have a good selection of 10s as well, but I haven't done a direct swap of a set of 10s, so can't recommend specifics other than to say, get in touch with them. Quality is good, price is right. I am running Kendrick's in my 4x10 Bassman.

+1 on Warehouse Guitar Speakers, I put their ET65's in a 2x12 cabinet I have and have been very happy with them. They recently released a 10" version: wgs4.com/10-et10-65-wattsYou could also reach out to them directly and ask the question, they're very helpful.

Eminence has your speaker. Check the response curves on-line. Pick one with less 3k. If in Kentucky, go to their factory. They have all of them mounted in a demo room with a switcher, patch in your amp and play all day. You will walk out with the perfect speaker for you and your amp.

Weber makes a 10" Alnico speaker that is just amazing in any Fender amp! I have 4 of them n a blackface super cab with a 64 bandmaster chassis.
